Amazing Spicy Chicken Thai Zoodle Recipe
This past week I started Weight Watchers. I am really enjoying the options and accountability. A friend of mine knew I was looking for healthy recipes and how much I love Thai food. She sent me a recipe from Domestic Superhero that I was able to adapt to my eating needs and it turned out better than I would have ever have expected. Let me share with you this Amazing Spicy Chicken Thai Zoodle Recipe.
Most Important Tool
The most important thing to make this a Zoodle recipe is that you have a zoodle maker. I have the OXO Good Grips Handheld Spiralizer and it works great. I ordered it and it came in two days. Love PRIME! What I like about it the best is that it is small and doesn’t take up a lot of real estate in my drawer. You can’t make this recipe without a kitchen tool like this.

Ingredients:
- 3 medium zucchini spiralized into zoodles
- 1 medium squash spiralized into zoodles
- 1-1/2 pounds of boneless skinless chicken breast
- salt
- 8 to 16 ounces mushrooms chopped I love Mushrooms so I used 16 oz.
- 2 small carrots peeled and shredded ( I used store bought shredded carrots. )
- 2 large eggs beaten
- 1/4 tsp red pepper flakes
- 1/3 cup lite soy sauce
- 3 TBS Splenda brown sugar. You can use regular brown sugar.
- 1 TBS sriracha
- 3 cloves garlic minced
- 1 tsp of ground ginger
- 1/4 cup cilantro chopped Optional
- 4 green onions chopped
- nonstick spray
Let’s put it all together
Step 1
Use your Zoodle maker and spiral out your zucchini & squash. Lay your spirals out on a paper towel and sprinkle with salt. Just let them sit and continue to step 2
Step 2
Cut your chick up into small cubes. Spray saute pan with cooking spray and cook chicken. Make sure you salt and pepper your chicken to your preference. Once it is finished, put into a dish for later use.
Step 3
Crack and beat the two eggs. Add the Red Pepper Flakes to the egg. Scramble in your well-sprayed pan. Once completely cooked, place in a bowl. ( I add it to my chicken bowl)
Step 4
In the same pan, spray it again with cooking spray. Cook your mushrooms, carrots & garlic. Cook until tender.
Step 5
While step 4 is cooking, mix together your soy sauce, brown sugar, sriracha ginger. Then take a paper towel and pat dry your spiral zoodles. The salt should have drawn out all the extra water from the noodle. Pat dry several times. Chop up your green onions and cilantro to be used.
Step 6
Add zoodles & sauce mix into the pan with the veggies. Once you have this well mixed, add the eggs and chicken. Toss until everything is coated well. Top with your green onions and cilantro.
This will make 4 servings.
This recipe is so good and I am amazed at how the zoodles take on the flavor or the dish and stays firm. It is a great alternative to eating pasta.
Since I am on Weight Watchers, I always look at the point values. This dish serves 4 and it is 9 Smart points.
