Amazing Breakfast Casserole in a Hurry
We love having guests in our home. Sometimes we have guests that stay at our home on the spur of the moment. When this happens, you need to have breakfast for them for the morning. I have learned over the years not to stress out over this detail. If you make your guest feel welcomed they will love anything that you fix for them. Even when I am in a hurry, this easy breakfast casserole is great for guest.
Easy Breakfast Casserole
If your house is like mine, it seems like a revolving door a lot of times, in which I love. So with knowing that any given evening I might have a guest staying with us, I have started keeping certain ingredients in my freezer for this fast and easy breakfast casserole.
Here is what you need:
- 7-8 large eggs ( I use egg whites as well if I don’t have that many eggs on hand)
- 8 slices of white bread. (I keep a loaf of bread in the freezer just for this recipe)
- 2 cups of chopped ham ( I keep this in the freezer as well just for this recipe)
- 2 cups of shredded cheese (I keep this in the freezer just for this recipe)
- 1/2 of milk
- Salt & Pepper to taste
Preheat oven to 400 degrees. Oil 9 x 13 casserole dish with non-stick cooking spray.
Take the frozen bread and cut the crust off each piece. They cut into cubes. Place into casserole dish. Place in microwave for 45 seconds to get warm and soft. This will help with the quick absorption of liquids.
Whip the eggs and egg whites together and season with salt and pepper. Add the milk and stir.
Spread the 2 cups of ham over the bread cubes and follow with the 2 cups of cheese.
Pour egg mixture over the bread cubes.
Cover with foil and bake for 30 minutes. Uncover to check. You will see firmness in the center. If still “wet”, leave in for another few minutes, checking every 5 minutes.
Place under broiler for a couple of minutes to brown the top.
Serve with a wonderful cup of coffee and juice
This recipe can also be put together the night before and place in the refrigerator to be cooked the next morning.
